Pancakes Preparation: Makes 12-14 (4-Inch) pancakes. You will need: 2 cups buttermilk pancake mix, 1-1/3 cups milk or water. To make: 6 or 7 pancakes, mix: 1 cup, water or milk: 2/3 cup; To make: 20 or 22 pancakes, mix: 3 cup, water or milk: 2 cups. Heat skillet or griddle over medium-high heat or to 375 degrees F. Grease skillet or griddle. (2) Stir Pancake Mix and milk or water with fork or whisk until smooth (batter will be thin). Pour by slightly less than 1/4 cupfuls on hot skillet or griddle. (3) Cook 1 minute or until edges just begin to dry. Turn; cook 1 minute or until golden brown. Betty’s Tip: For thicker pancakes, stir in additional mix. High altitude (3500-6500 ft): no change.
